Ingredient of the month: Ceylon Cinnamon

Few ingredients are more Christmassy than cinnamon.

 

The sweet, warming spice is a typical garnish in mulled wine. You may even have used it in fragrant stick bundles as a tree or present decoration.

 

Cinnamon is also a popular ingredient in Danish buns and pastries – hardly surprising in a country that popularised the concept of hygge!

Sri Lankan spice

 

We use the Ceylon variety of the spice which is harvested from the aromatic inner bark of Sri Lanka’s cinnamomum verum tree.

 

Our cinnamon is ethically sourced directly from 35 organic farmers in Sri Lanka who become part of our community. We gift them plants to enhance their crop and hold frequent knowledge-sharing sessions about organic cultivation.

 

Because we grow our own organic cinnamon from seedlings, our farmers can carefully nurture these plants to keep them healthy until they become bushy evergreens seven to 15 metres high.

 

This all happens in areas of the country which have average temperatures of between 20-30C and rainfall of between 1,250-2,500mm – conditions we know Cinnamon loves!

 

Wellbeing warmer

 

Not only does cinnamon taste comforting but it’s also known for its antioxidant benefits. Popular in ayurvedic medicine, the ingredient is traditionally used for its anti-inflammatory and immunity supporting properties. Research even suggests it may have antiviral qualities.

 

Royal riches

 

It may be frankincense and myrrh that feature in the Nativity story, but did you know cinnamon was once a popular gift for monarchs because of the value placed on it in ancient times? It was even used in Egypt in the mummification process!

Part of our ‘Super Goodness’ range, this blend is a unique creation featuring the superfood moringa and robust ginger. While ginger adds some punch, Moringa gives the blend a hint of bitterness. A light and refreshing everyday choice.

 

Cocoa, Cinnamon & Ginger
Created with chocolate lovers in mind, this blend contains the bold ingredient of real organic cocoa! The cinnamon and cocoa give this tea depth and indulgence, while the ginger and fennel add well balanced floweriness.

 

Intense Chai

As the name suggests, Intense Chai is an elevated blend filled with bold and aromatic spices. Naturally caffeine-free, it celebrates the warming spices of cinnamon, ginger, turmeric and cardamom, making it perfect for a cosy, comforting anytime treat.

 

White Tea, Matcha & Cinnamon

Around a third cinnamon, this expertly balanced uplifting blend works well with desserts or on its own. Matcha gives it a a savoury note which fits very well within this white blend.
